Ingredients of Basic Chicken Curry

  1. Prepare 2 kg of chicken wings.
  2. It's 2 tsp of tumeric.
  3. You need 1 1/2 tsp of garam masala.
  4. Prepare 1 tsp of cumin powder.
  5. You need 2 tsp of Kashmiri chilli powder.
  6. It's 1/2 tsp of clove powder.
  7. You need 1/2 tsp of cardamom powder.
  8. Prepare 1 tsp of paprika.
  9. Prepare 1/2 tsp of pepper powder.
  10. Prepare 2 of onions.
  11. It's 2 of tomato's.
  12. You need 1/2 tsp of poppy seed.
  13. Prepare 1/2 tsp of mustard seed.
  14. You need 1/2 of fennel seeds.
  15. Prepare 2 Tbs of chopped fresh coriander.
  16. It's 2 1/2 tsp of garlic paste.
  17. It's 1 1/2 tsp of ginger paste.
  18. It's 500 ml of liquid chicken stock.
  19. You need to taste of Salt.

Basic Chicken Curry step by step

  1. Mix powder ingredients together..
  2. Slice onions, chop tomato's.
  3. Prep chicken (cut off wing tips) and wash..
  4. In a medium deep dish add just enough vegetable oil to cover base of dish. Heat oil in high heat.
  5. Add poppy seeds, mustard seeds and fennel seeds. Fry for a minute..
  6. Add onions and garlic paste and fry till onion start turning brown..
  7. Just when the onion start to turn brown add the tomato's and ginger. Mix well and fry.
  8. Add chopped coriander, mix well and fry for a minute..
  9. Add the powder mix and fry for a few minutes.
  10. Add chicken and stir in. Fry for a few minutes. When chicken mix starts to dry up add a TBS of water and keep stirring. Add 2 tsp of salt.
  11. Add chicken stock, 2 Tbs at a time while stirring in (I usually just just pour a little at a time).
  12. When the chicken is Covered with liquid, cover with a lid and simmer for 30-40 minutes. Check every 5 minutes and stir. Add salt if necessary.
  13. Chicken curry done! Serve with rice..
